Another (often overlooked) option is to just write a short script and
schedule it via CRON. Use command line tools to do the recording.
As an example a simple:
arecord -f cd -d 10 - | oggenc - -r -o filename.ogg
will capture 10 seconds of audio from the default sound input and encode

Check within alsamixer that you have the correct input selected and the
levels on that input are set, and that it is not set to mute.
Also check your jack setup. Sometimes it helps to start up one of the
Jack level indicators (something like meterbridge works well) and route
your audio input
