I will speak only for Pegasus as it is the mail client I've been using for the past
four years. The current version (and those before it) cannot execute embedded scripts
in e-mail and therefore is so far immune to viruses and exploits that use any type of
embedded scripting.
Robert Graham's sniffer FAQ has some excellent information that I'm sure you will find
useful, including some suggested tools and how they (sniffers) work. As you would be
aware, there are many methods that can be used to 'stealthily sniff'.
