I just went through the list archives searching on "Xen", and it seems
like it is in fact possible to run SipX in a Xen VM, with small
systems.
I'm just looking to set up a home system so it would be very low use.

I was using ROM 4.0 with SIP 2.2. Without changing any settings i
upgraded the ROM to 4.1.2 and SIP 3.1.1 on sipx 3.10.3 (which i upgraded
from 3.8 via yum recently) and the auto-answer / mute disappeared and

Yes.
The 30 seconds is probably more the router terminating the connection
through the firewall (it's not sip aware).
The sipX server does not support stun at this point... this is how your
two phones were able to communicate.
