Gigabyte GA7N500 Pro2 mobos with the new Ubuntu Hardy and Hardy-based
distros.

Try replacing root=/dev/sdb1 with root=UUID=YOUR_ROOT_UUID
It is the default in Ubuntu and I think it should solve the problem.
