If your Juniper router has WCCP support then you can consider using it for
transparent proxying. The FAQ has a section on WCCP.

try using a route-map policy if you are using a cisco router. Create a
policy to match your "specific purpose" protocol and force the next-hop to
the "reserved" gateway.
