There doesn't seem to be a way to disable SWAT - so I just deleted it.

I hadn't thought of that - that can be a big gotcha if you
don't install Samba from source.
I know from experience that the Samba RPMs in RedHat 7.3
won't support challenge-response

You should probably be using --with-samba-sources=... to specify to
Squid where your Samba sources can be found.
