Go to help, get more voices and download the synthesizer authorization file.
Install that and your demo issue will go away.

Are you running the Retail version of Window-eyes or the version which
is free if you have Microsoft Office 2010 or later? The default voices
will depend on which version of Window-eyes you are running.

And I have also never heard of a demo mode that only ran for five minutes.
