So is all of the screen info on the Touch replicated on the ITouch ? I
want to be able to see the titles / album art etc. without having to
squint at a screen metres away.

I just bought a Logitech Touch, and using my QNAP as a server. It plays
MP3 very well but for Apple Lossless, it indicates that it is playing
but no music is heard. Instead it produces Noisy sounds

Try version 7.5.2 of the server and Touch fw instead, it has bugfixes
for alac playback.(7.5.1 plays alac but some bug makes it fail in some
cases).
Or transcode the lossles files to FLAC
