couple of hours in, and locks the whole app. Only cure is killing
pulseaudio (-KILL) and restarting it.

I've had this too. I've got ATI X800SE and im running dapper x86_64. I tried
both fglrx driver and radeon ('ati' driver has never worked with my card since
day 1).
I dropped back down to 1:1.0.2-0ubuntu10 and it's up again no problem.
I've attached my Xorg.0.log file in case it helps anyone
