On Gutsy (actually it is also true for Feisty) we have vpnc 0.4.
In this version --disable-natt option was removed!!!
This means that config file option:
Disable NAT Traversal doesn't work anymore.
To obtain desired effect one has to use option:
NAT Traversal Mode none

New uploaded version add Nat Traversal option.
For the DNS Option it's not easily possible to do it as Network Manager manges
that itself.

About the DNS thing. If you have a specific issue or use case that you
believe this plugin cannot be used for, please file a new bug with those
specifics. Using the DNS Update option will shortcircuit the design of
network-manager
