I've been running various versions of Debian without the GUI as my
Squeezebox Server for the last few years now, and it's perfect for what
I want it to do, which is just to serve up music reliably and run my
library management tasks via cron jobs.

You could keep some of the GUI around and only login if you need it. X
itself doesn't need much ram compared to the desktop environment.
Try Xubuntu, it uses the xfce user interface that is very light weight
and not resource heavy. Great for "older" PCs.

Just did this a few days ago.
As you mentioned Debian, you can just use one of their "standard" live
CDs and you'll get a command-line only install. Their other versions
are named after the GUI they employ (XFCE, Gnome etc)

it's fairly easy. you just have to get comfortable with the cli.
choose a distro and go from there. there are packages which install for
each eg rpm for fedora, rhel etc which basically takes care of the
install and the dependancies.
install webmin which will allow you to use a web based interface

In the old days you used to install linux then add X-windows and set up
config files and pray as you hit startx. Anyway I was wondering if I
can get an old celeron eee pc 701 to perform a little more smoothly if
I replaced XP with a console only install of a Linux OS.

you're sort of right. if you have a look at the ports
http://www.freebsd.org/cgi/ports.cgi?query=squeezeboxserver&stype=all
you will see that it does require mysql. i've not really had a chance
to play with it at the moment as i got it up and running by downgrading
mysql.
