You might want to check out USBImage if you like "cut to the bone"
apps.
I've switched over to the "official" Raspberry Pi Imager utility. While
it would suggest installing the Rapberry Pi OS, you can select any image
you want.

You can select which version (i.e. 7.9.3, 7.9.4, 8.0.0), however, you
cannot pick which commit to use. AFAIK, the distribution server only
keeps the latest version of the tarballs.
If you want to play with different git commits., then you will need to
install from git, and handle everything
