I recommend the Zero with a JustBoom Amp Zero pHAT. The pHAT can power
the Pi, and you can choose a power supply to match the speakers you want
to connect. It has very good sound quality and even great music power,
if you need it.
If your wifi AP is far from the Pi or you want to put it into a me
I have for RPI based players with piCore working at my home, one RPI 1B
(single core cpu), one RPI A+ (single core cpu) ans two RPI 2.
I cant find any differences between the performance of these models. So
I am pretty shure, that the Pi zero also working well as a
piCorePlayer.

four faster cores. FWIW 1.4w equates to approx £1.40 per year in
electricity.

I would say a ordinary rpi is for warmshower geeks only and the zeros
are for badasscoldwatershower geeks ...

Imho the only products that make sense are the pi zero w and the pi 3.
The pi zero w adds comms capabilities and the pi 3 costs the same as a
pi 2 (if you can still get one).
By the time you factor the cost of a PSU, SD card, case, and whatever
accessories you need the saving between different pi
I have a Pi Zero that I was going to use with a USB HiFiMe Sabre DAC as
a minimal size player. I can't get the USB DAC to work for love nor
money. However it works out of the box with a Pi3 so on that basis I'd
opt for a Pi3.

What's the best option for a player only (no LMS) and ethernet
connectivity (no Wifi) to stream flacs? I like the much lower power
consumption of the zero but by the time I add a USB-to-ethernet adapter

PiZ: I find the WiFi better than expected - for me it works from the
bottom of the garden to the bottom of the drive, and every room in the
house (and the loft). (Single draytek access point, fwiw.)
Creating an image with pre-configured WiFi to flash onto the SD card is
pretty straightforward too.
I find the pizero a little underpowered.
+WiFi once enclosed a little weak.
+Lack of Ethernet and full size USB frustrating when trying to configure
and set it up.
Standard Pi was far quicker and easier to setup.

I do have a Pi Zero with an amp hat and pCP set up which I use with a
pair of old speakers. All USB powered :-). Which means
Lack of proper USB ports is the only downside. Also a bit slower than a
Pi3 would be given the reduced ram and CPU capability but more than
enough as a music player.
