To do this we'd have to do an HTML to XSL:FO conversion. There are
libraries for this sort of thing, but nothing like this already in
place.

Yes. Check out the product_calculated_info table.
It has total times order, total times viewed, and average customer
rating.
The numbers are a little funky when used with Marketing Components,
since it counts the components of a product.
