Hmm that is strange. Try reinstalling the app maybe? Remember that you will
have to have your Amazon sign-in info to get back in. You won’t lose any of
your data on Alexa or anything if you do this. Also maybe even before that,
restart your phone? Is this the only App it is doing thi

It should work off your apple ID as well as phone number,
Note that if you are working on a mac computer and need to 2fa authenticate and
the code went to an iPad then there is or doesn’t need to be a phone number
involved in that process.
