That has been happening to me during the last few updates. Disconnecting and
re-connecting phone to PC has resolved- but once rebooting PC resolved and
update suddenly showed up as installed, with no other action

I'm not sure doing over the air updates is easier. I find the updates
through iTunes to also be totally accessible. With iTunes updates, I'm
able to do a quick encrypted backup before I start, I get more updates
as the update process progresses, and it requires a lot less free
