The only two settings as far as ending time I have ever seen is an actual time,
which by default is one hour after the start time.
The other setting I have seen is no actual time, but ends on the same day as it
starts. This is the setting if the all day setting is turned on.

appointment, and find it in the reminder list on the lower half of the screen,
just touch it once so focus is on it, but don't open it and flick up with one
finger and you should hear, delete double tap and it is gone.

I am assuming that by non ending, you are referring to repeating events, then
by ending one, you mean to end a repeating event.
Here is what I typed into Fantastical to make an event that repeats every
Tuesday, Wednesday, and Thursday, then it stops repeating on August 19th, plus
sets an alert

I just opened Fantastical 2 double tapped on new event.
Did the two finger double tap and dictated the following:
Dr. Test july 27 at 9 AM alert 30 minutes
Then I double tapped on the add button.
The event was correctly created with an alert of 30 minutes before.
