Is there any possibility that typing mode has been changed from touch typing to
direct touch typing. I could see that doing it. Get in a text field and turn
your rotor to typing mode and see what you are on and change it if this is the
case. I think this only applies if you are running iOS8 and
yeah, i mean, it seems to be taking a lot of pressure on the screen to
type stuff, doesn't make a lot of sense.

I've heard of just the opposite when a new OS was released, namely, 7.0.
However, I haven't heard of this problem. Just thinking out loud, here, but
have you tried restoring from your latest iTunes backup?

Settings, General, Accessibility to check if zoom has been turned
Dare I suggest clean the screen? it can make a big difference.

You haven't by chance enabled any third party keyboards such as Fleksy?
I tried the latest version of Fleksy the other day and noticed I was getting
very unpredictable results with input. I wasn't getting exactly what you're
seeing but things such as executing selected controls would not work
