It sounds like you are getting two concepts confused in the contacts app.
The add field option is for adding fields that are not normally displayed such
as birthday or notes.
If you wish to add additional entries to fields that are always displayed in
the add/edit contact screen, but th
had your tapped the edit button before looking for the feature you wanted.
