Also, if one does not want to have to hold down the button by invoking
the pass through gesture, then one can place the phone to their ear
and it will play an audible tone signaling the start of recording.
When taking the phone away from the ear, recording will stop.

I couldn't get it to work either, then my wife looked it up. To record an audio
text message you have to hold the record button while recording. To do this
with VoiceOver, do the pass-through gesture; otherwise known as double tap and
hold and do not lift your finger until you are done
How and where are you wanting to record your voice message? Is it an
iMessage or some where else?
