You can either do it the old way which is to go into some sort of edit field
and then turn the rotor until you get to typing mode and flick up/down to
select the one you want or new in iOS 8 you can now also set your default
typing mode in Voiceover settings. Just after Rotor you will find what

When you are in an edit box, try to leave your rotor on character or word or
something like that. Don't leave your rotor on the typing mode because, I
suspect you accidentally flick up or down and that is what changes it.

You need to get into another text field--any text field will do. Once there,
look at the rotar again. Typing mode will magically appear, and you can change
it back to the way it was.

Hi Kimber, When you're on the home screen, hit the home button once.
That puts you into the search mode. There you will find a rotor that
includes touch typing.
