If rebooting doesn't do it, make sure you have cleared out the app switcher.

My understanding is that, yes, the AirPods Pro Max can pair with non-Apple
devices. However, if you have a problem pairing your original AirPods with
your Trek, I would expect you will also have a problem pairing any other AirPod
model with the Trek as well.
