After tinkering with this problem for a while now, I think I could use some
help:
As far as I've understood the doc, Fine Offset WH2600 only sends out its
internal "absolute pressure" value as "pressure".
However, in my case, it seems to be read as "barometer".

Right. There is no place to map it.
An Acurite console will display this total for the day, but weeWX
calculates its own daily total.

What you have now done is quite probably the better approach anyway.

If you are talking about the NOAA reports all you need to do is delete all
NOAA reports, and they will all be generated/regenerated again on the next
report cycle

rain = rainfall.3420.*

I updated the database schema and pumped the extra sensors into some custom
fields. This way, I only need to run one weewx instance. My extra sensors
are only capturing temp and humidity so there isn’t calculations I need
weewx to do on those, and one db is preferred
I just imported about a year's worth of data from WeatherUnderground into
my database. Now, I would like to show the reports.
I ran "wee_database --drop-daily" and "wee_database --rebuild-daily",
followed by "wee_reports" in an attempt to generate everything.
