Could anyone give me some possible problems that would have created the
following scenario?
Testing the conversion of a ZFS Pool on a hardware mirror to that same
ZFS Pool using ZFS mirroring, by breaking the mirror, attaching the 2nd
disk to the pool...

The OP here is posting the "Z"illion dollar question ... And apologies in
advance for the verbal diarrhea.
Most of the Enterprise Level systems people here (my company) look at ZFS and
say, "Wow that's really cool...but..." What comes after the "but..." is a host
of questions that ultimately c
ZFS will stripe across all Root Level VDEVs, regardless of type of VDEV
(mirror, raidz, single whole disk, disk slices, whatever).
e.g.
tank01
mirror
c1t0d0
c1t1d0
raidz
c1t2d0
c1t3d0
c1t4d0
mirror
c0t0d0s7
c0t1d0s7
Should give you 3 stripes.

Is it possible to convert a plain jane disk (or slice) vdev to a mirror
vdev? With SVM (and other Volume Managers) it's not terribly difficult
to change a plain meta device to a mirrored meta device. Can this be
done with ZFS?...

I started a thread last week regarding CLARiiON+ZFS+SPARC = core dump
when creating a zpool. I filed a bug report, though it doesn't appear
to be in the database (not sure if that means it was rejected or I
didn't submit it correctly).
Does anyone on the list have definitive information on whether ZFS works
