Excel - fully and completely is probably a tall order for some
spreadsheets.

I have one spreadsheet that didn't fare so well in the xfer to Star
Office - relied on multiple worksheets in workbook - totals carried over
from individual worksheet to main page didn't work - single click links
to other worksheets didn't work - seems to have all the commands / menus
/ toolbars that Excel had.

Word - fairly easy for Star Office but I imagine that footnotes, table
of contents, linked books would be a problem.

OK but there are alternatives to Star Office - KDE 2.2  w/ KDE Office
1.1

not easily accomplished on RedHat 7.1 - better be a standard install of
Roswell final.
