Well, I don't know about altering the XP boot menu, but I do know that LILO
can boot XP, so if you have a boot disk for your RH installation, boot into
Linux with that, and alter your /etc/lilo.conf (I believe it's something
like this):

=/etc/lilo.conf

other=/dev/<Windows XP Partition>
    label="Windows XP"

=cut

Then run `lilo` and you should have your LILO menu back with the ability to
boot Windows XP.
