    Well you didn't specify what kind of proxy server it is, so this may 
not be what you're looking for.  You said NT & 2000 so its possible you're 
using MS ISA server in which case the logs would be located at 
\\servername\c$\Program Files\Microsoft ISA Server\ISALogs
    They're full of alot of garbage so you'll have to do some sorting but 
its all in there.
