I remember mailet and smtpserver logs...
If I have the problem again, I'll adopt Hes' scheme, probably.

Sounds like you might have a problem in your config. Which logs are the biggest?
As for logging in general, you could adopt Hes' logging scheme. Personally, I have all of my logs going back for years. By the way, they compress quite nicely.
