IMHO there is a bad thing in James: no unit tests / no functional tests. I think that tests are a primary need expecially for open source projects.
The more difficult tests to implement are the network servers (SMTPServer, POP3Server) tests and the RemoteDelivery test. It would be really cool to have a full functional test for the SMTP protocol (both for SMTPServer and RemoteDelivery). I think this is not easy and would be a good project to improve James reliability.
