Have you read the docs on james website? http://james.apache.org/documentation_2_1.html goes through most steps. I think that's the closest you'll get to a user manual (for now).
Once you get the hang of that, all you need to do for virtual hosting is add an xmlvirtualusertable, or jdbcvirtualusertable mailet (See the faq). Have a go - it's easy! If you get stuck, email the list with specific questions.
