Bruce, I had to add some text to the stunnel man page, the source bundle came with the existing man page in nroff and as a pod file. You might want to create your new file in pod (http://en.wikipedia.org/wiki/Plain_Old_Documentation) which is basically text with some very minimal markup, then convert to a man page with pod2man which is part of perl. This is pretty easy.
