I used to work for a company who used to do this in the enterprise space - which used a special editor to be able to run over 10's and 100's of thousands of PDF documents and pull the textual data out and transform it into virtually type of output.
There is a massive markety for this type of product - but it also has a supprisingly large ammount of competition.
