Given that he is not full time yet, I would try going lite, as in a short written IOU and a full eyestare commitment. It's amazing how far trust can carry you.
The IOU could be the terms of his options/shares and vesting schedule that he will receive when he joins full time with you. When he joins his vesting schedule would be already accelerated. Until you both join full time the options and the company are pretty worthless anyway.
