Hi Sam, As the others have mentioned, you don’t want to store the card data yourself - you want a payment gateway that securely stores them and just gives you a token to issue charges as you need.
I’ve no first hand experience when it comes to NZ, but I’ve used both Pin Payments (https://pin.net.au) and eWay Token Payments (http://www.eway.co.nz) to do exactly this for AU clients. It looks like they support NZ too. Pin in particular is an absolutely breeze to work with as a developer.
