What Linux should I install (for a user who is more dumb than smart).

I would recommend Ubuntu. My parents/siblings have been using it for
more than 2 years without any issues. All they do is check mail, chat,
write documents, spreadsheets (... the usual stuff). I have made icons
on the desktop so they can access everything easily. What the heck,
my mom even once did a fsck :-) when the power went off and the
computer was shut down. (In similar situations windoze just dozed off
and had to reinstall twice).

Sorry if this sounded like a user testimonial but I am tired of hearing
that '200x' is the year of the linux desktop every year :-)

As for the (k)mail files, just copy your $HOME and it should work.
You may have to overwrite the files which kmail creates when it starts
off the first time with your existing ones.
