Extending the water memory idea, what is going to affect the stucture/function of the colloid inside the cell or mitochondria is the presence/absence/concentration/distribution of mineral,amino acids, proteins. because of their polarity they will organize/distribute within the water in something that is reminiscent of a biological crystal lattice(bone is a denser crystallization than cellular colloid, and exhibits pizeoelectric properties). Ratio of the minerals/subtances present (Fe/Mn, Cu/Zn, Na/K, H/O, Ag/?) in macrostructure of colloid just as important as any single substance?
