With all the handling of the wires, etc, you may have slightly
contaminated them or the brewing water.  Wash them off with H2O2 and
white paper napkin or towel, and then rinse 3 times with distilled
water.  Do same for lid and jar as well.  Shake water out in between
rinses.  Try not to touch the active materials with your fingers, use
paper towels, etc to hold them while handling. 

Try bending your electrodes into a "U" or "J" shape.  This should give
them more stability.
