My bag of xylitol says that it is extracted from corn somehow. I googled the stuff and there are a number fruits and vegetables that can provide this, including birch as well as corn.
I don't use it for anything that my wife may consume as she has a very pronounced reaction to consuming anything made with corn, corn starch or corn syrup. Instead of her normal daily migraine, she has extremely severe migraines for the next three days. We are always being blind sided too. Xylitol is great for me, but I won't risk it for my wife....... sigh! Truthfully, I didn't know that people had a hard time getting this stuff. I just bought my bag of it at the local health food store and didn't think anything of it.
