I have always wondered about this as well.

I have a friend who sells distillers and
he says that they all have post processing
these days with carbon to eliminate contaminates
in the form of volatile gases that get through
the steam distilling process. The literature
on both the distillers that I've bought say
that its to -polish- taste - whatever that means.
As you may know, a drawback of carbon
filtering for CS is it may leave carbon
fines residue that affect conductivity, etc.

BTW, for anyone looking for a great home
distiller. I love my stainless steal Mini Classic
from the Pure Water Co, of Lincoln , NE. 
It makes about a gallon in 3.5 hours and is
very easy to use.
