Distillation is the process by which water or another solvent is
purified by passing from the liquid to a vapor state, then back to the
liquid state, leaving all solutes behind.

This can be done two ways, either by heating until it boils, or
decreasing the pressure until it boils.   Both should produce comparable
products.
