Then I'd have to setup another AA if that user doesn't ring, plus if the
user goes in and messes with their call forwarding I've just flubbed my
inbound routing as well.

I suppose I could have a phantom extension on the phone that does the
same thing but then if the call isn't answered forward to another AA.

Just seems to me to be a long way around a simple solution (of course I
see it as simple because I don't have to do the coding :-) ).  Is there
a technical reason why it is hard to route to a user/hunt group/acd
queue for the daytime answering position?  Of course we'd probably want
something Daytime ringing -> Failover to Daytime AA.

Why can't you?  Set up your live attendant's user to simultainiously
call  
forward to the AA with a schedule that is valid during night hours.
Thus  
during "day" hours the live attendant's phone will ring, and during  
"night" hours the schedule will kick in and the AA will answer.
