Some thoughts regarding your idea.
My understanding is that, sipxproxy will not change Contact header in the
200Ok.
It is sipxbridge, who sets this header. Even if it is sipxbridge of another
sipx server.
Looking at what 7912 gets in Contact of 200Ok, and what it sets as Request
URI of Ack, I would guess, that 7912 just sets configured paremeter "proxy"
there.
That is ... It would not help...

But anyway, I believe, it is worth trying... 
How about the following experiment:
As far as I remember you have two sipx servers, so you could setup some test
dial rules, that will route a call through sipxbridge of another sipx
server.
It should work for 7940. Pay attention to Contact in 200 Ok, if I'm not
mistaken, it will be <ip_address_of_another_server:5090>.
Try to call from 7912. I guess, it will send Ack to "configured proxy".

Let me know what you'll get..
