MAPI is really for applications generating email and connecting to it,
really to call a messaging server to send a message. Its a library to
enhance the dataset on the more commercial aspect of mail (that's why when
you install one of the big commercial email clients your mapi32.dll, etc.,
gets exchanged for a different one (goes from 128k in size to almost 800k).

I've never seen an actual gateway use MAPI to broker messages or
synchronization between to different systems. I have seen an API gateway do
so. When you are dealing with MS there is no guarantee they won't break it
at any time. So I appreciate the creative thinking.

Perhaps if the user inserted an IMAP or POP account into their outlook
instead? Why couldn't the IMAP server run on sipx on its own domain? You
would still delete from Outlook, just in a different folder. What would
prevent you from installing an imap client on your smartphone? Wouldn't it
be nice when your next Exchange SP blows up, voicemail (and voicemail to
email) is not affected?
