You mean like the fax server functionality that was included (built-in) in the most recent version of SipX? It e-mails the received fax, as opposed to saving it in a folder, but otherwise, seems to be what you're looking for.
If you really want the fax->folder ability, If memory serves correctly, a procmail filter can be setup to dump attachments into a folder, which could be shared via SMB, or the folder could simply be a mount point for a remote share on a Windows server.
