The zoom of the split PDF, as for the snapshots, is discrete. You can set it using the popup at the lower right. An important reason to do this is precisely because the zoom buttons, menus, and shortcuts control the zoom of the main PDF (they can only do one thing). As for zoom pinching, it won't work with discrete zoom factors, because it's continuous by nature. It's also why scrolling has no problem, because it's continuous. BTW, the discrete zoom factors were an essential condition to have the whole split PDF feature in the first place, it's either this or nothing.
