Hi All -- Thanks for the advice below. Just to clarify, when I am asking 
about changing the preferences, I am indeed asking about changing the 
default behavior for *future* notes, not batch changing the existing 
notes.

The problem with the text color, unless I am missing something, is that I 
cannot change the text color in the Notes prefs like I do for a specific 
note because under Prefs, I cannot seem to get the text color to change 
(note that the color box, obtained from shift-apple-C or through the fonts 
dialogue box, does not have the little box that says "text color" under 
prefs like it does when changing the color for a specific note).  In the 
notes prefs, I am able to change the default font pointsize, but not the 
default color.

The prefs are for the /default/ settings, they never change anything for 
existing
notes (that would be totally wrong).

To change the default font color, you essentially follow the same 
procedure as in 1,
but now in the Notes prefs.
