Hi All -- Thanks for the advice below. Just to clarify, when I am asking about changing the preferences, I am indeed asking about changing the default behavior for *future* notes, not batch changing the existing notes.
The problem with the text color, unless I am missing something, is that I cannot change the text color in the Notes prefs like I do for a specific note because under Prefs, I cannot seem to get the text color to change (note that the color box, obtained from shift-apple-C or through the fonts dialogue box, does not have the little box that says "text color" under prefs like it does when changing the color for a specific note). To change the default font color, you essentially follow the same procedure as in 1, but now in the Notes prefs.
