The difference is that 
1. Skim's search depends on the search options in the search field's menu 
(Preview does not allow to change those options, it always searches like (Whole 
Words Only).
2. Skim does not allow grouping words using double-quotes (so the quotes will 
be part of the searched words). That's because Preview does some extra 
analyzing of the search term, while Skim simply splits at spaces. This will 
change in the next release.
3. When you search *without* Whole Words Only, it looks for the complete 
phrase, no need for quotes.
