There's a flag "--settings" that can be passed into the viewer that specifies the preferences filename to use. This is usually specified in the shortcuts (Windows)/arguments.txt (MacOS) created used for viewers in different distribution channels or test grids (e.g. "--settings settings_aditi_beta.xml"). Depending on how your viewer is packaged or how you're running it you may need to specify it manually. It doesn't modify the cache location, though, and it uses the same directories.
