A trick I learned along the way is to do a network installation, even on a
standalone machine.
If you unpack your tarball into /usr/local/so51inst then, as root, do:
cd /usr/local/so51inst/office51
./setup /net
When it prompts for the directory to install in change the offer of
/root/Office51 to /usr/local/Office51.
You can then blow away /usr/local/so51inst.
Individual users can then install from /usr/local/Office51 and it will
only transfer the minimum necessary into their home directory.
