I backup to another machine using rsync,
and specify a backup dir, named with the date.
So I can go back any number of days.

It's a fast backup and disks are a lot cheaper
than they used to be.

For something completely different, any sluggers
want to try out DIBS?
It and encrypts and RAIDs your data out to a bunch of
peers.
